Quinoa Vegetable Bowl

Serves: 2-3

Ingredients:

1 1/2 cups quinoa, cooked
1 cup cherry tomatoes, cut in half
1 green onion, chopped
1/4 cup red onion, finely chopped
1/2 jar of artichokes (in water), cut in
slices
1 cup kale, finely chopped
1/2 cup cilantro, finely chopped
1 bell pepper, diced
1 English cucumber, diced
1 avocado, sliced
1 lemon, juiced
3 tablespoon olive oil

Directions:

  1. Place ingredients into a bowl and top with avocado.
  2. Add lemon, olive oil, and salt and pepper to taste.

Notes:
